Today is such a beautiful day, the sun is shining…but I’m definitely in my feelings today. ⁣
⁣
One year ago today, I had my last ever colonoscopy. And from this day last year, my whole world turned upside down for a little while. It is crazy to think how much my mind and body have changed in the past year, and it has very much been a grieving process. ⁣
⁣
As someone with a chronic illness for most of her life, I was no stranger to going to doctor’s offices, having tests (bloodwork, colonoscopies, bone scans, CTs/MRIs) and feeling unwell more days than not. It is sometimes still hard for me to say that I don’t have IBD anymore because it was so much a part of my identity. ⁣
⁣
Today, I choose to feel my feelings, grieve my past self, and use my journey, experience, and knowledge to hopefully reach others who are in the same boat and who may be struggling. ⁣

It’s Sugo Sundays here at home and I am making o It’s Sugo Sundays here at home and I am making one our family’s favourite pasta dishes: Tortellini Bolognese. This pasta recipe is literally comfort in a bowl.  I often make this dish during the week too because it comes together in 20 minutes thanks to my Instant Pot. ⁣
⁣
Check out the recipe below, I know you’re going to love it! ⁣
⁣
Ingredients: ⁣
⁣
•450g ground meat (I used ground bison) ⁣
•2 carrots, chopped ⁣
•½ red onion, chopped ⁣
•2 celery stalks, chopped ⁣
•3 cloves garlic, minced ⁣
•1 bay leaf ⁣
•32oz tomato sauce (I used homemade) ⁣
•½ cup beef broth ⁣
•700g fresh tortellini ⁣
•Salt to taste ⁣
•Parmiggiano Reggiano for topping ⁣
 ⁣
⁣
Directions: ⁣
⁣
1. Using the Saute function on your Instant Pot, brown your ground meat until no longer pink ⁣
⁣
2. Add the carrot, onion, celery and garlic and mix to incorporate ⁣
⁣
3. Add tortellini and mix again ⁣
⁣
4.Add the tomato sauce, beef broth, bay leaf and season with salt. Stir gently to combine. ⁣
⁣
5. Turn off the Saute function and place the lid on your Instant Pot ensuring the knob is turned to “sealing” ⁣
⁣
6. Using the Manual function on the Instant Pot, set your timer to 15 min ⁣
⁣
7. Once the 15 minutes have passed, you can either release the pressure from your Instant Pot all at once, or allow for a slow release ⁣
⁣
8.Top your pasta with freshly grated parmiggiano Reggiano (or even some hot chilis if you’re feeling spicy) and…. ⁣
⁣

One year ago, today I had the opportunity to travel to Saint-Sauveur, Québec to advocate for IBD. It was such an amazing experience. I got to meet so many people, and I was able to share my IBD journey with over 200 people who work directly in the IBD community. ⁣
⁣
The experience was so humbling, and the overall vibe was compassionate, supportive, uplifting, and positive. Raising awareness and advocating in support of the IBD community is something that I will forever be involved in and passionate about.⁣
⁣
One year later, I no longer have a colon, but IBD will always be a part of me and my life journey. By starting Gutsy Girl Diaries, I chose to embrace this path, break the stigma, and empower others with the disease as well as those diagnosed with colorectal cancer and/or living with an ileostomy. ⁣
⁣
As always, a huge thank you to everyone who has been with me on this journey. I am so grateful to have your support, empathy, compassion, and care.⁣⁣⁣

If you’re like me and you love chocolate and coconut, I can guarantee you will love this recipe. It is so flavourful and satisfying and incredibly easy to whip up! Stored in the freezer, these dates a great as part of meal prep for an easy grab and go treat any time of the day. ⁣

1 cup shredded, unsweetened coconut ⁣
1/3 cup coconut cream ⁣
12 medjool dates, pitted ⁣
½ cup chocolate chips ⁣
1 tbsp coconut oil ⁣

1. Line a small baking tray with parchment paper ⁣
2. In a bowl, add the coconut cream and shredded coconut and mix until combined ⁣
3. Stuff each date with some of the mixture ⁣
4. In a separate bowl, melt the coconut oil and chocolate chips ⁣
5. Dip each stuffed date into the melted chocolate and place on your lined baking tray ⁣
6. Freeze for 20 minutes ⁣

⁣
Packed full of fall flavour with pumpkin, cinnamon, ginger, and nutmeg, these gluten free pancakes will become a breakfast staple in our household. ⁣
⁣
Here’s what you need: ⁣
⁣
Ingredients: ⁣
⁣
½ cup pumpkin puree ⁣
½ cup milk of choice (dairy or non dairy will work) ⁣
2 eggs ⁣
2 tsp vanilla extract ⁣
1 cup gluten free flour (I used Bob’s Red Mill 1 to 1 Baking Flour) ⁣
¼ cup melted dairy free butter (I used Earth Balance Original Buttery Spread) ⁣
¼ cup brown sugar ⁣
1 tablespoon baking powder ⁣
¼ tsp nutmeg ⁣
¼ tsp ginger ⁣
¼ tsp allspice ⁣
½ tsp cinnamon ⁣
Pinch of salt ⁣
Avocado oil for cooking ⁣
⁣
⁣
Directions: ⁣
⁣
1. In a large bowl, add the flour, baking powder, salt and fall seasonings. ⁣
⁣
2. In a separate bowl, add the pumpkin, eggs, milk, vanilla, butter and brown sugar. Mix to combine ⁣
⁣
3. Pour the wet mixture into the dry ingredients. Using a spatula, fold the wet ingredients into the dry ingredients very gently. The key to making these pancakes fluffy is to not overmix them. ⁣
⁣
4. Place a skillet over medium heat and spray with avocado oil ⁣
⁣
5. Pour a half cup of pancake batter into the pan ⁣
Once the edges are sizzling and golden brown, flip and cook the pancake on the other side ⁣
⁣
6. Set the cooked pancake aside, and repeat until the batter is finished ⁣
⁣
7. Top with butter, maple syrup, or anything your heart desires! ⁣
⁣

This dish is so creamy, delicious and the pumpkin adds a creamy layer of richness that is so cozy and comforting. Best part is… this recipe comes together in no time, so it’s perfect to make any day of the week! ⁣

Ingredients: ⁣
⁣
1 small onion, chopped ⁣
2 garlic cloves, minced ⁣
200g pancetta, diced (I used Longo’s Curato) ⁣
¼ cup vodka of choice, (I used Grey Goose ) ⁣
1 cup pumpkin puree (I used Farmer’s Market) ⁣
¾ cup cream, I used Rolling Meadow ⁣
2 tbsp tomato paste (I used Longo’s Curato) ⁣
¼ tsp nutmeg ⁣
500g pasta, any shape (I used Longo’s Curato Mezzi Paccheri Lisci) ⁣
Salt to taste ⁣
Parmesan cheese for topping (Measure with your <3) ⁣
⁣
⁣
Directions: ⁣
⁣
1. Bring a large pot of water to boil, salt the water, add the pasta and cook according to the package directions. *Be sure to save 1 cup of pasta water* ⁣

2.Heat a large saucepan and add the pancetta. Stir frequently and cook until golden brown and the fat is rendered ⁣
3. Add the onion and garlic, stir and cook for 3-5 minutes, until the onion has softened ⁣ 

4. Add the tomato paste. Mix to combine and cook for 6-8 minutes ⁣

5. Deglaze the pan with the vodka, and cook for 3-4 minutes ⁣. 

6. Add the pumpkin and the cream. Mix to combine and season with salt and nutmeg ⁣ 

7. Once the pasta is cooked, add the pasta and the reserved pasta water to the large saucepan with the pumpkin vodka sauce ⁣

8. Mix until the pasta is evenly coated with creamy sauce, top with parmesan cheese, and…. ⁣

Since having my ostomy surgery in January 2023, I Since having my ostomy surgery in January 2023, I am always on the hunt for quick and easy meals that I can digest. Chicken and rice cakes are two foods that are ileostomy friendly, so I find that I have them both quite often. ⁣
⁣
Today for lunch, I made this simple chicken salad on rice cakes. For the chicken, I used Kirkand canned seasoned chicken breast. I like to keep this in my pantry for when I am in a pinch, and need to make a healthy, high protein meal in minutes. The other ingredients are totally customizable to your taste, I chose these ones because I really like them and are not considered high risk blockage foods for my ileostomy. ⁣
⁣
 ⁣
⁣
Ingredients: ⁣
⁣
100g chicken breast, flaked (canned or freshly cooked) ⁣
2 wedges Laughing Cow cheese ⁣
2 tablespoons Longo’s Muffuletta spread ⁣
2 Quaker Rice Cakes (I used the white cheddar ones for some extra flavour) ⁣
 ⁣
⁣
Directions: ⁣
⁣
Place the chicken and cheese to a bowl and mix until combined ⁣
Add the Muffuletta spread and stir ⁣
Top each rice cake with an equal amount of the chicken mixture….and ⁣
 ⁣

I wear a two piece Coloplast appliance, the Sensura Mio, and I change my full appliance every 6-7 days. In hospital, I was using another line of the Coloplast 2 piece system, Assura, which I liked but I just prefer the feel and design of the Sensura Mio. ⁣
⁣
The two piece appliance system consists of a baseplate/flange and then the ostomy pouch that clips onto the bag. I usually change my ostomy pouch every other day by unlocking it, then detaching it from the flange and putting on a new one. I remember in hospital I couldn’t get the bag to click on and I was so overwhelmed! But I got the hang of it pretty quickly, just takes practice :)⁣
⁣
Other Coloplast products I use are: ⁣
⁣
Coloplast Ostomy Scissor: this is used to cut the opening of baseplate/flange to fit the stoma. There is also a measuring guide included in each box of ostomy pouches as the size of the stoma can change significantly in the first 6 weeks post surgery ⁣
⁣
Brava Protective Ring: This is placed on the flange for extra protection against leaks⁣
Adhesive Remover Wipes: to help remove the flange and protective ring from my skin ⁣
⁣
Brava Skin Barrier Wipes: to protect the skin from irritation caused by leaks or adhesives ⁣
⁣
Brava Stoma Powder: absorbs any left over moisture and helps to keep the skin dry ⁣
⁣
Brava Lubricating Deodorant: I put this into my pouch at the end of an appliance change and also after each time I empty as it neutralizes odour and also lubricates so any thicker output and move down the pouch easily ⁣
⁣
Over the last months, I’ve learned so much about living with an ostomy. Everyone has their own routine, products, changing schedule, etc. Before my surgery, I watched a ton of ostomy bag change videos and after surgery, and they were so helpful! I learned to not compare my routine to others. The process and learning to live with an ileostomy is beyond overwhelming…you have to do what is right and comfortable for you 🙏🏻⁣

Everyone loves a plate of creamy vodka pasta…am I right? This pumpkin twist on the classic vodka sauce is out of this world! This dish is so creamy, delicious and the pumpkin adds a creamy layer of richness that is so cozy and comforting. Best part is… this recipe comes together in no time, so it’s perfect to make any day of the week! ⁣

Ingredients: ⁣
⁣
1 small onion, chopped ⁣
2 garlic cloves, minced ⁣
200g pancetta, diced (I used Longo’s Curato) ⁣
¼ cup vodka of choice, (I used Grey Goose ) ⁣
1 cup pumpkin puree (I used Farmer’s Market) ⁣
¾ cup cream, I used Rolling Meadow ⁣
2 tbsp tomato paste (I used Longo’s Curato) ⁣
¼ tsp nutmeg ⁣
500g pasta, any shape (I used Longo’s Curato Mezzi Paccheri Lisci) ⁣
Salt to taste ⁣
Parmesan cheese for topping (Measure with your <3) ⁣
⁣
⁣
Directions: ⁣
⁣
1. Bring a large pot of water to boil, salt the water, add the pasta and cook according to the package directions. *Be sure to save 1 cup of pasta water* ⁣

2.Heat a large saucepan and add the pancetta. Stir frequently and cook until golden brown and the fat is rendered ⁣
3. Add the onion and garlic, stir and cook for 3-5 minutes, until the onion has softened ⁣ 

4. Add the tomato paste. Mix to combine and cook for 6-8 minutes ⁣

5. Deglaze the pan with the vodka, and cook for 3-4 minutes ⁣. 

6. Add the pumpkin and the cream. Mix to combine and season with salt and nutmeg ⁣ 

7. Once the pasta is cooked, add the pasta and the reserved pasta water to the large saucepan with the pumpkin vodka sauce ⁣

8. Mix until the pasta is evenly coated with creamy sauce, top with parmesan cheese, and…. ⁣
