Behind every colorectal cancer statistic is someon Behind every colorectal cancer statistic is someone’s story. 💙

Colorectal cancer doesn’t just affect “someone else.”It affects our friends, our parents, our partners, our communities… and sometimes ourselves.

Today I’m wearing blue for Dress in Blue Day…
for the people fighting, the survivors, the thrivers, and the families standing beside them.

Colorectal cancer is one of the most common cancers in Canada …but when caught early, it’s highly treatable.

Awareness matters. Conversations matter. Screening matters.

March is Colorectal Cancer Awareness Month 💙 T March is Colorectal Cancer Awareness Month 💙

This month always hits differently. I am here because I was diagnosed with colorectal cancer and I survived it. Not everyone does, and that truth is why I continue to share my story, even when it’s hard.

I am posting for those hearing the word cancer for the first time. For those currently in the fight. For survivors learning how to live in their after. For caregivers loving someone through the unimaginable. And for those we have lost to colon cancer. You are never forgotten.

6 years. So much growth.
My 6 year GGD-aversary 💜

The first pic was the very first photo I posted in 2018. What you couldn’t see was that I was in the middle of a flare up. I was exhausted, inflamed, and struggling but also choosing to turn pain into purpose.

Over the last 6 years, this space has held the highs and the lows. Flare ups, a colorectal cancer diagnosis, ostomy surgery, learning to reconnect with my body, food, movement, and self worth. Healing hasn’t been linear, but it’s been honest inside and out.

This journey became about breaking stigma, advocating, and showing that strength can look many different ways. Finding confidence in a body that has been through so much and still shows up.

I’m endlessly grateful for this community. The friendships, the shared stories, the collaborations with amazing brands, and the reminder that none of us are alone.

To those who’ve been here from the start, thank you.
To the newcomers, welcome. I’m so glad you’re here 💜

Here’s to 6 years of guts, growth, and telling my story.

Got a few messages about my Veal Saltimbocca after Got a few messages about my Veal Saltimbocca after sharing it on my IG stories Monday… so here are the step-by-step videos along with the full recipe!

Crispy prosciutto, tender veal, and a rich buttery wine sauce…this dish is simple enough for a weeknight but elegant enough for company. 🍷

What you’ll need:
• Veal cutlets
• Salt & freshly ground pepper
• Thin slices of prosciutto di Parma
• Flour (for dredging)
• Olive oil
• Butter
• ¼ cup Marsala wine (or substitute with dry red wine if that’s what you have on hand)
• ½ cup chicken stock
• 1 clove garlic, minced

How to make it:
1️⃣ Season veal with salt & pepper.
2️⃣ Top each cutlet with prosciutto, pressing gently to adhere.
3️⃣ Lightly dredge in flour, shaking off excess.
4️⃣ Heat olive oil & butter in a skillet over medium-high heat.
5️⃣ Cook veal (prosciutto side down first) until golden and just cooked through. Remove and set aside.
6️⃣ Deglaze the pan with Marsala (or dry red wine).
7️⃣ Add chicken stock and minced garlic. Simmer until slightly thickened and fragrant.
8️⃣ Swirl in a little extra butter for a silky finish, then spoon the sauce over the veal.

Serve with rice, mashed potatoes, pasta, or crusty bread to soak up that incredible sauce.

Save this for your next cozy dinner night 🥰

Enjoy! 💜xo

There is nothing better than a true comfort meal… and this one makes the whole house smell absolutely amazing ☺️

These oven-braised chicken thighs turn out so tender they literally fall apart with a fork. The carrots get perfectly soft, the onions melt into the broth, and that rich gravy poured over rice? Pure comfort in a bowl. ❤️

Comforting Oven-Braised Chicken Thighs

Ingredients:
• 12 chicken thighs
• 4 carrots, cut into quarters
• 1 Vidalia onion, sliced
• Salt, pepper, paprika, garlic powder, onion powder, Italian seasoning (season with your heart)
• Olive oil
• 2 cups chicken broth
• 2 sprigs parsley
• 2 tbsp arrowroot starch (cornstarch works too)
• 2 tbsp cold water

Instructions:
	1. Preheat oven to 350°F.
	2. Arrange chicken in a 9x13 casserole dish.
	3. Season generously with all seasonings and drizzle with olive oil.
	4. Using tongs, coat the chicken evenly.
	5. Top with carrots, sliced onion, and parsley.
	6. Pour in 2 cups chicken broth.
	7. Cover and bake for 1 hour 30 minutes.

Your kitchen will smell incredible at this point… just saying!

	8. Remove from oven and increase temperature to 450°F.
	9. In a small glass, mix arrowroot starch and cold water to create a slurry.
	10. Carefully pour the drippings from the casserole into a measuring cup and whisk in the slurry.
	11. Pour the thickened mixture back over the chicken.
	12. Return to the oven uncovered for 20–25 minutes, until beautifully golden and bubbling.

Serve over rice and savour every comforting bite.

Much love and #staygutsy 💜xo
