Pistachio Tiramisu for Valentine’s Day ❤️ Be Pistachio Tiramisu for Valentine’s Day ❤️
Because love should be soft, indulgent, and a little nutty 😋

This pistachio tiramisu is my idea of romance:
☁️ fluffy mascarpone
☕ coffee + Kahlúa–soaked ladyfingers
💚 rich pistachio layers
✨ effortless, swoon-worthy, unforgettable

Perfect for date night, Galentine’s, or self-love with a spoon.

RECIPE 👇🏻

Ingredients
• 475g mascarpone cheese
• 200g heavy cream (35%)
• 5 tbsp pistachio paste
• 300ml strong brewed coffee (cooled)
• 1/4 cup Kahlúa liqueur
• 1 package savioardi cookies 
• 50–60g roasted pistachios, chopped

Method
1️⃣ Brew strong coffee, let cool, then stir in the Kahlúa.
2️⃣ Whisk mascarpone + pistachio paste until smooth and glossy.
3️⃣ Whip the heavy cream until fluffy.
4️⃣ Gently fold the mascarpone mixture into the whipped cream.
5️⃣ Dip the savioardi quickly into the coffee mixture and layer in your dish.
6️⃣ Spread cream, sprinkle with roasted pistachios, repeat layers.
7️⃣ Finish with cream and pistachios. Chill 2–4 hours (or overnight).

💌 Serve cold. Fall in love instantly.

Family Day Weekend + Valentine’s Vibes! 🥰 Co Family Day Weekend + Valentine’s Vibes! 🥰

Cozy moments call for comfort food that doesn’t undo your goals and this High-Protein Spinach & Artichoke Dip is the perfect appetizer this Family Day weekend and perfect for Valentine’s Day snacking too!

Ingredients:
• 1 cup non-fat Greek yogurt, I used @siggiscanada 
• 1 cup low-fat cottage cheese, blended, I used Kirkland
• 1 can artichokes, drained & chopped 
• 2 cups frozen chopped spinach (thawed & squeezed dry)
• ½ cup low-fat mozzarella
• 1 tsp garlic powder
• 1 tsp onion powder
• Salt & pepper to taste

Instructions:
1️⃣ Preheat oven to 425°F.
2️⃣ Thaw and squeeze excess water from spinach.
3️⃣ Blend cottage cheese with Greek yogurt until smooth.
4️⃣ Mix in artichokes, spinach, spices, and cheese.
5️⃣ Pour into a 1½-qt (≈1.4 L) baking dish.
6️⃣ Bake 20 min, then broil 3–5 min until bubbly and golden. 
7️⃣ Let cool slightly… then dig in with your favorite dippers!

🍽️ Serves 4-6
Approx. 17g protein per serving

World Cancer Day 💜 Today I join the #upsidedow World Cancer Day 💜

Today I join the #upsidedownchallenge for World Cancer Day: a reminder that even when life feels upside down, hope and support lift us back up.

This photo was taken on January 13, 2023 just moments before I went into surgery. A surgery that saved my life from colorectal cancer.

I remember feeling a quiet hope that I was holding onto with everything I had. Today, I look at this version of me with so much compassion… and so much gratitude.

On this day, I’m holding space for everyone whose life has been touched by cancer:
💜the fighters in the thick of it,
💜the thrivers rebuilding and redefining life after,
💜the beautiful souls we carry in our hearts,
💜 the caregivers who show up with endless strength and love.

Cancer changes you. It strips things down to what truly matters. And it also reveals resilience you never knew you had.

This is why I share my story. Sharing the hard, the messy, the hopeful..connects us. It reminds us we are not alone. Our journeys, our scars, our voices… they make us stronger, together.

🙏🏻If you know someone currently facing cancer, a survivor, or a caregiver, tag them below so we can surround each other with support, love, and community. No one should walk this road alone.

I used to carry the weight of things that were nev I used to carry the weight of things that were never mine to hold, trying to manage outcomes
and fix situations that were always outside of my control.

Eventually I learned to let go of that responsibility.

I can control my response.
I can listen better.
I can show up.
I can have boundaries.

My two cents:
Things feel a little lighter when we stop trying to control everything and gently bring our focus back to what’s actually ours to carry

It’s the moon face for me. 4 photos. Same me. V It’s the moon face for me.

4 photos. Same me. VERY different feeling in my body.

If you’ve ever dealt with steroid puffiness or the dreaded “moon face,” you know how frustrating it is to not recognize your own face in the mirror. Being on and off steroids for my IBD took a toll both physically and mentally.

Here’s what I’ve personally experienced drinking Happy Juice:

💜My inflammatory markers are the lowest they’ve ever been

💜The puffiness in my face has gone down so much

💜My cortisol levels are finally feeling balanced

💜Less bloating

💜Energy that actually lasts through the day

💜A clearer, calmer, HAPPIER mind
