Banana Chocolate Chip Protein Muffins These soft, Banana Chocolate Chip Protein Muffins

These soft, fluffy muffins are naturally sweetened, packed with protein, and perfect for breakfast, snacks, or meal prep!

Ingredients:

* 3 ripe bananas, mashed
* 2 eggs
* ¾ cup plain Greek yogurt 
* ¼ cup maple syrup
* 1 tsp vanilla extract 
* 2 cups oat flour
* 1 scoop protein powder (I used @canadianprotein 
* ½ tsp baking soda
* 1 tsp baking powder
* 1 tsp cinnamon
* Pinch of salt
* Chocolate chips (measure with your ❤️)

Directions:

1. Preheat oven to 350°F 
2. Line a 12-cup muffin pan with silicone muffin liners (or paper liners) 
3. In a large bowl, mash the bananas. Whisk in the eggs, Greek yogurt, maple syrup, and vanilla.
4. Add the oat flour, protein powder, baking soda, baking powder, cinnamon, and salt. Mix until just combined.
5. Fold in the chocolate chips.
6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
7. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
8. Let the muffins cool in the pan for 5–10 minutes, then transfer them to a wire rack. If using silicone liners, allow the muffins to cool almost completely before removing them—they release much more easily once cooled.

I see a body that has endured surgeries, setbacks, fear, and healing. A body that continues to show up for me every single day.

This journey has changed me in ways I never expected. Not just physically, but emotionally too. It’s taught me that healing isn’t about getting back to who you were. It’s about learning to embrace the person you’ve become.

Maybe this is what healing looks like. Not forgetting what I’ve lost, but learning to appreciate everything that’s still here.✨

My Favourite Places to Eat in Rome 🇮🇹🍝 After shar My Favourite Places to Eat in Rome 🇮🇹🍝

After sharing our Italy trip, so many of you asked where we ate in Rome. These are the places I’d happily return to, from classic Roman dishes to unforgettable pastries and gelato.

📍 Tre Caffè Roma
A must for your first maritozzo experience. This iconic Roman pastry is a soft, lightly sweet bun filled with clouds of fresh whipped cream. The perfect start to a day exploring Rome.

📍 Osteria da Fortunata
A classic Roman spot known for fresh handmade pasta. We shared all the favourites: Carbonara, Cacio e Pepe, Amatriciana, and Gnocchi alla Sorrentina. Comforting, traditional, and exactly what you hope for in Rome.

📍 Parenti
One of my favourite cornetti of the trip. The pistachio-filled cornetto was buttery, flaky, and generously filled. A breakfast stop I’d happily repeat.

📍 Tonnarello
A Trastevere favourite with a lively atmosphere and delicious Roman classics. The pasta was incredible, and the pizza was equally impressive with its light, crisp crust.

📍 All’Antico Vinaio
Yes, it’s touristy, but it’s absolutely worth it. We shared La Golosa and L’Italiana, served on their famous schiacciata bread. Crispy, airy, and packed with incredible Italian ingredients.

📍 Gelateria La Romana dal 1947
Some of my favourite gelato of the trip. My go-to flavours were Fior di Latte and Pesto di Pistachio. Creamy, rich, and the perfect afternoon treat.

📍 Clorofilla
The perfect spot for my birthday dinner. Beautiful décor, an eclectic menu, and everything made in-house. A memorable evening filled with creative dishes and a wonderful atmosphere.

📍 Vanda
Our final dinner in Rome was in the charming Trastevere neighbourhood. The lamb was incredible, and my son’s Coda alla Vaccinara (Roman-style braised oxtail) was cooked to perfection.

📍 Roscioli
A great stop for traditional Roman pastries and cornetti. We also grabbed their savoury croissant sandwiches for the flight home, and they were far better than airplane food!

One thing I’m most proud of since my ostomy surgery?

Traveling internationally with my ostomy.

Before booking this trip, I worried about everything that could go wrong. The heat, multiple flights, multiple room accommodations. 

But…having IBD, being diagnosed with colorectal cancer, and living with an ostomy has taught me that fear doesn’t disappear by waiting..it disappears by doing 💪🏻

So I packed extra supplies, I’ve been staying hydrated, planned ahead, and went for it.

And guess what?

The world is still beautiful.
The beach is still relaxing.
The memories are ALWAYS worth making.

If you’ve been putting off a trip because of your ostomy, this is your reminder that you are capable of more than you think.

Your ostomy isn’t stopping your life.
It’s helping you live it. 🙏🏻

CRISPY BAKED CALAMARI ❤️ One of my favourite thin CRISPY BAKED CALAMARI ❤️

One of my favourite things about Mediterranean cooking is how a handful of simple ingredients can turn into something that feels restaurant-worthy.

This crispy baked calamari is proof. Cherry tomatoes, briny olives, onion, garlic, herbs, olive oil, and breadcrumbs come together in the oven to create the perfect balance of crunchy, juicy, and savoury.

No deep frying. No complicated steps. Just a tray of deliciousness that disappears far too quickly.

What I love most:
• Baked, not fried
• Packed with Mediterranean flavours
• Perfect for sharing (or not 😉)

Save this one for your next summer dinner, aperitivo night, or when you’re craving a taste of Italy at home.

1️⃣ Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2️⃣ In a large bowl, combine:
	•1 kg calamari (fresh or thawed)
	•2 cups cherry tomatoes, halved
	•1 cup olives, chopped
	•Italian herbs (fresh parsley is great too)
	•2 cloves garlic, sliced
 •1/4 vidalia onion, chopped
	•1 cup breadcrumbs
	•Pinch of salt

3️⃣ Toss everything together until the calamari and vegetables are evenly coated.

4️⃣ Transfer mixture to the prepared baking sheet and spread into a single layer.

5️⃣ Drizzle generously with about ⅓ cup olive oil.

6️⃣ Bake for 20–30 minutes, stirring once halfway through, until the calamari is cooked and the

Literally me at 3am after another ostomy leak… jus Literally me at 3am after another ostomy leak… just two days after the one I had on Mother’s Day ..Trying not to cry/laugh at the same time while changing my bag in the middle of the night 😭

Sometimes this life feels really heavy. The leaks, the exhaustion, the disrupted sleep, the laundry, the cleanup, missing work, canceling plans, and trying to pull yourself together when your body has other ideas. Some days it’s hard to see the silver lining in any of it.

Humour helps me cope. Making light of the chaos helps me survive it. But sometimes you just need a day to physically and emotionally recover from it all and honestly… today is one of those days 🤍
