Gut Healthy Vegetable Soup
Calling all vegetable lovers! My family and I just got back from the best vacation ever at Walt Disney World and along with that came many, many indulgences….eek! When I got home, all I wanted was soup! This soup is super tasty, flavourful and hearty. It is packed with nutrient-dense veggies and detoxifying spices that have anti-inflammatory properties and support your immune system. I used bone broth here too because it’s great for your gut! PS The fact that I can make it in my Instant Pot is a huge time saver. I made a huge batch so that I could freeze some portions for future use.

Ingredients
1 tbsp avocado oil
1 sweet onion, diced
3 cloves garlic, minced
250g sliced cremini or white button mushrooms (about 8 ounces)
3 carrots, chopped
2 cups broccoli, chopped (I used the stems too!)
1 inch knob of fresh ginger, peeled and minced
2 teaspoons ground cumin
¼ teaspoon ground cinnamon
5 cups @broyaliving chicken bone broth
2 cups Tuscan kale, roughly chopped
Fresh lemon juice, for serving (optional)
Sea salt to taste
Directions:
- Using the saute function on your instant pot, add the oil, carrots, onions, and garlic. Cook until the onion and garlic are fragrant.
- Add the remaining vegetables and spices (except kale) and stir to combine.
- Add the bone broth and stir to combine. Secure the lid on your Instant Pot and turn the knob to sealing. Set your Instant Pot using the Soup function (30 minutes)
- Once your soup is ready, let the pressure release naturally. Stir in the kale and allow it to wilt. Just before serving, check your seasoning and re-season with salt and pepper. You can also add a squeeze of fresh lemon juice, if desired.
