AIP Instant Pot Chili

My husband and I both have food sensitivities, so I wanted to create a chili recipe that has the deep, warm flavours of a traditional chili, sans tomato or chili pepper. This chili is great for anyone with autoimmune disease because it is nightshade free, loaded with vegetables, anti-inflammatory herbs and spices, and of course, gut healing bone broth.

Naturally, I chose to make this chili in my Instant Pot. Because making chili in the Instant Pot is so easy and relatively quick to make, it’s a staple in my household on weeknights. I also make extra so that I’m set for meal prep or even store some in the freezer when I’m low on groceries and want something comforting and nutritious for dinner …Are you sold yet?

Just like a traditional chili recipe, this nightshade free chili is so thick and hearty which makes a complete winner in my books. You can load it up with toppings too! Not pictured here, but l topped mine with some chopped avocado, but you could also use sliced red and/or green onion, thinly sliced radishes, chopped fresh herbs, or crushed plantain chips if you like crunch.

Feel like something extra to go with your chili? Use it as a topping for sweet potato fries, spiralized vegetable noodles, or gluten free pasta….YUM

Ingredients:
4 cloves garlic, minced
250g shiitake mushrooms, chopped
4 slices bacon, chopped
1 tablespoon dried basil
1 tablespoon dried oregano
1 inch ginger, grated
1/2 teaspoon ceylon cinnamon
Sea salt to taste
3 medium carrots, chopped
½ cup organic canned pumpkin
2 cups @broyaliving bone broth
1 pound organic lean ground beef
1 onion, chopped

Directions:
1. Using the Saute function on your Instant Pot, cook bacon (it doesn’t have to be crispy, but cooked enough to add a smoky flavour
2. Add the garlic, mushrooms, ginger (fresh and dried), and spices and cook until mushrooms are tender
3. Add the ground beef and cook until the meat is no longer pink
4. Add the carrots, onions, and bone broth to your Instant Pot
5. Secure the lid on your Instant Pot and ensure the pressure valve is in the sealing position.
6. Select: Manual, High Pressure, and set the timer to 30 minutes
7. Once the timer goes off, let the pressure release naturally.
8. Add your spinach and stir. The heat from the chili will wilt the spinach.

Toppings (optional):
• sliced avocado
• sliced red and/or green onions
• thinly sliced radishes
• crushed plantain chips
• chopped fresh herbs
