Pineapple Cashew Cauliflower Rice
Hey Friends! I was totally craving fried rice but not craving the extra carbs and calories, so I came up with this recipe for Pineapple Cashew Cauliflower Rice.
Subbing riced cauliflower for rice is a great way to eliminate grains from a meal and you still feel totally satisfied. This meal also has cashews in it so the good fats in the cashews also help to keep you full. This dish on its own is fully vegan, but I topped it with some baked shrimp.
You could top with any protein you wish, #vegan or not!
What You Need
1 red onion, diced
4 carrots, grated
250 g shitake mushrooms, chopped
1 head of cauliflower, riced
3 cloves garlic, minced
1 cup pineapple, diced
1 cup frozen shelled edamame
2/3 cup raw cashews
2 tbsp sesame oil
4 tbsp coconut aminos
1/2 tsp garlic powder
1/2 tsp cumin
salt to taste
How to Make It:
In a saucepan, heat the sesame oil then add the veggies and seasonings. Once the veggies are softened, add the cashews and pineapple. Cook for about 5 more minutes or until your desired texture of veggies is reached…and you’re done! Eat as is or top with the protein of your choice. Enjoy!
