Sweet Potato Protein Waffles
Good morning and Happy Victoria Day! I love holiday Mondays because I get to take a little extra time with breakfast. It’s so important to really sit down and have a meaningful meal with the family to talk about just about anything. Yesterday I experimented with making these Sweet Potato Protein Waffles. I love the way they turned out! They are grain free, dairy free, super moist, super flavourful, and super easy to make! These waffles are also gut-friendly, as I used a fermented vegan protein powder for some extra digestive support.
What you need (Makes 2 waffles)
1 large sweet potato, roasted and mashed
2 eggs
¼ cup almond milk (I used @lovemysilk)
1 scoop vanilla protein (I used @genuinehealth fermented vegan proteins+)
¼ tsp baking powder
¼ tsp @simplyorganicfoods ceylon cinnamon
To Make the Waffles
Heat up your waffle iron. Place all ingredients into a large bowl and mix until fully incorporated. The consistency of the batter should be a little thicker than that of pancakes. Pour half the mixture into the waffle iron and close. Cook for about 5 minutes or until golden brown. Top with your favourite toppings, I used fruit, slivered almonds, honey, and more cinnamon. Enjoy!
