
Gut Healthy Carrot Apple Cookies
Hello friends! These cookies are everything you love about carrot cake but without the sugar. I really enjoy these cookies as an on the go breakfast with my coffee because they are not sweet at all. The coconut and pecans give a lot of flavour and texture…so good! Check out the recipe below!
Ingredients:
- 1/2 cup tahini
- 2 large eggs
- 1 cup Bob’s Red Mill almond flour
- 1/2 cup unsweetened coconut
- 2 scoops Vital Proteins Collagen Peptides
- 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 1/2 cup grated apple
- 1/2 cup grated carrot
- 1/2 cup raw pecans, chopped
- Coconut oil for greasing your baking sheet
Instructions
- Preheat the oven to 350 degrees F and grease a baking sheet with coconut oil
- Add eggs and tahini to your Vitamix or high speed blender. Blend until smooth.
- In a mixing bowl, add the almond flour, shredded coconut, collagen peptides, baking soda, ground cinnamon, and sea salt. Stir to incorporate
- Transfer the wet mixture from your blender to your mixing bowl and stir well until combined.
- Add in the remaining ingredients (apple, carrot, and pecans).
- Using a tablespoon, drop cookie dough onto the greased baking sheet
- Bake 15 minutes, or until cookies are golden-brown around the edges.
