
Instant Pot Garlic Lemon Chicken
This Instant Pot Garlic Lemon Chicken is the perfect easy low carb meal any day of the week. Because I can make this recipe in my Instant Pot and the kids love it, it will definitely be part of our weeknight dinner rotation.
Searing the chicken helps to seal in those amazing juices and gives the chicken that extra layer of flavor. The chicken cooks up tender and juicy with a delicious lemony butter garlic sauce. It’s made with simple ingredients that are easily accessible and pack so much flavour.
I served the chicken with asparagus, green beans, and roasted butternut squash since that’s what I had in my fridge. But truly, any vegetable would work great here, so it’s up to you. If you are looking for a heartier meal, serve it with some roasted potatoes, quinoa, rice, or pasta. The possibilities are endless! Check out the recipe below!
Ingredient
- 3 tbsp olive oil
- 3 tbsp butter
- 1 lb skinless boneless chicken thighs
- 5 cloves garlic, sliced
- 1 onion, diced
- Juice and zest of 1 lemon
- 1 cup @broyaliving chicken bone broth
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ tablespoon dried basil, thyme, and oregano
- Sea salt to taste
Directions
- Season your chicken with salt, herbs, and spices
- Set your instant pot to the saute function and add your olive oil
- Brown the chicken in batches, ensuring you get a good sear on both sides and transfer to a plate.
- Once you have seared all of your chicken, add the butter, onions, garlic, lemon zest, lemon juice, herbs, and bone broth
- Place the lid on your Instant pot, turn the knob to sealing and set the pressure on manual for 12 minutes
