Gut Healthy Spinach and Banana Pancakes (Gluten and Dairy Free)
So my son is on this spinach kick..he’s been putting spinach on everything! (I’m not complaining because he’s totally not a veggie lover)
I was a little hesitant with this recipe, because I wasn’t sure if the kids would like it, but they loved it! It was super simple to make and because it contains whole, nutritious ingredients, they were satisfied all morning.
I added Vital Proteins collagen peptides because #guthealth . The collagen peptides are super versatile and have no colour or flavour, so it’s a no brainer to add them. #momwin

Ingredients:
- 1 ¼ cups Bob’s Red Mill Gluten Free Oats
- 1 cup milk (I used almond)
- 2 tbsp maple syrup
- 1 tbsp ground flax
- 1 scoop Vital Proteins collagen peptides
- 1 cup raw spinach
- 1 banana
- 1 egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Butter or coconut oil for greasing
Directions:
- Add the oats to your high speed blender, or Vitamix and blend until it becomes a flour consistency
- Add all remaining ingredients and blend on high until smooth
- Heat a skillet or griddle and grease with butter
- Place ¼ cup portions of pancake batter in to your pan and flip once each pancake gets bubbly on top
- Serve with your favourite toppings
