Double Chocolate Chip Cookies (Gluten, Grain & Dairy Free, Keto)

What’s better than chocolate chip cookies? DOUBLE chocolate chip cookies of course!

These cookies are everything you want in a cookie…they are chewy, fudgy, and the perfect treat or snack. Did I mention they are gluten, grain, and dairy free… yassss! (They are also keto friendly for all of my keto buddies)

These cookies are also super satisfying. I find that when baking with almond and coconut flour because both flours are so dense, which is great because it keeps me from eating the entire batch in one sitting!

Ingredients:

Directions:

  1. Preheat your oven to 350 and line a baking sheet with parchment paper
  2. In a mixer, blend together cashew butter, vanilla and coconut oil until creamy.
  3. Add the egg and mix again
  4. Add the keto sweetener and milk and mix until combined
  5. In a large bowl add your dry ingredients, including the chocolate chips
  6. Add the wet mixture to the bowl with the dry ingredients and fold together until a cookie dough forms
  7. Roll balls of cookie dough and place on the lined baking sheet (you should get about 8-10 cookies)
  8. Place another piece of parchment over the cookie dough balls and press on them gently
  9. Bake for 18-20 minutes, let cool and…
