Paleo Blueberry Snacking Bread

Hey Friends! I tested this paleo snacking bread a couple of weeks ago and I’m so happy to finally share it with you.

This bread is so tasty that it barely lasted a few days in our kitchen…even the kids loved it! What I love about this bread is that it is gluten free, grain free, dairy free, and paleo so even us spoonies can enjoy it without any issues. Plus, the bursts of blueberries make it sweet enough to call it a dessert in my book!

If you want to satisfy that afternoon or after dinner sweet craving with a dessert made with real ingredients, you gotta try this bread…I promise you won’t regret it ☺

Here’s the recipe:

  • 2 ripe bananas, mashed
  • 2 eggs at room temperature
  • 3 tablespoons coconut oil
  • 3 tablespoons maple syrup
  • ½ teaspoon of vanilla extract
  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 teaspoon baking powder
  • 1 cup fresh blueberries
  • ¼ cup pistachios, chopped

Directions

  1. Preheat oven to 350
  2. Grease a loaf pan or line with parchment paper
  3. Add bananas, eggs, coconut oil, maple syrup, and vanilla extract to your @vitamix (or high speed blender). Blend until well incorporated.
  4. In a large mixing bowl, add the almond flour, coconut flour, and baking powder. Mix to combine.
  5. Add the blueberries to the dry ingredients (save a few to sprinkle on top)
  6. Make a well in your dry ingredients and pour the wet ingredients in. Mix gently until the wet and dry ingredients are combined and form a batter. The batter should not be thin, so add more almond flour as needed.
  7. Pour the batter into your greased loaf pan and top with remaining blueberries and chopped pistachios
  8. Bake in oven for 45-55 minutes (or until golden)

You can enjoy this bread on it’s own or you can top it with almond butter, fruit, yogurt, anything your heart desires!
