Grilled Calamari
Hello Summer!
The beautiful Toronto weather had us grilling all weekend!
One of my favourite things to order when I eat out is grilled calamari, so when I saw whole calamari in the freezer section of my local grocery store, I was inspired to make this dish at home.
This dish is super easy to prepare and execute. I love that it is light, so it works great as an appetizer but also pairs well with any side as part of a main meal. The dressing is fresh and bright, perfect for summer
Ingredients:
- 4-6 frozen/fresh squid tubes
- Salt to taste
- 2 tbsp olive oil
Dressing:
- ¼ cup olive oil
- 2 tbsp vinegar
- ¼ cup chopped parsley
- 2 cloves garlic, minced
- Salt to taste
Directions:
- If using frozen squid, thaw the squid completely
- Wash/clean the squid tubes using cold water
- Make incisions down the body of the squid tube, being sure to not cut all the way through
- Season with olive oil and salt and set aside until you are ready to grill
- In a small bowl, combine the olive oil, vinegar, garlic, and parsley. Season with salt
- Grill the squid for 4 minutes on each side
- Once the squid is cooked, cut the squid into rings, and pour the dressing over top, tossing to coat
