Gut Healthy Carrot Apple Cookies

Hello friends! These cookies are everything you love about carrot cake but without the sugar. I really enjoy these cookies as an on the go breakfast with my coffee because they are not sweet at all. The coconut and pecans give a lot of flavour and texture…so good! Check out the recipe below!

Ingredients:

  • 1/2 cup tahini
  • 2 large eggs
  • 1 cup Bob’s Red Mill almond flour
  • 1/2 cup unsweetened coconut
  • 2 scoops Vital Proteins Collagen Peptides
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup grated apple
  • 1/2 cup grated carrot
  • 1/2 cup raw pecans, chopped
  • Coconut oil for greasing your baking sheet

Instructions

  1. Preheat the oven to 350 degrees F and grease a baking sheet with coconut oil
  2. Add eggs and tahini to your Vitamix or high speed blender. Blend until smooth. 
  3. In a mixing bowl, add the almond flour, shredded coconut, collagen peptides, baking soda, ground cinnamon, and sea salt. Stir to incorporate
  4. Transfer the wet mixture from your blender to your mixing bowl and stir well until combined.
  5. Add in the remaining ingredients (apple, carrot, and pecans).
  6. Using a tablespoon, drop cookie dough onto the greased baking sheet
  7. Bake 15 minutes, or until cookies are golden-brown around the edges.
