Soooo I haven’t had broccoli since I started flaring and am testing it this week to see if I have any issues so keep your fingers crossed for me! As I am feeling better and better each week, I am starting to introduce more vegetables. The introduction process is one vegetable at a time for 5 days. I isolate the vegetables one by one this way if I have a reaction I would have a pretty good idea as to what the culprit is.
For the broccoli, I do prefer it steamed or oven roasted but given that this is the first time I’ve had it in forever, I boiled it. Boiling cruciferous veggies like broccoli makes them softer, but also results in a loss of nutrients. One way to still get the nutritional benefits of broccoli after boiling it is to drink the water it was boiled in. I know it sounds weird/gross but it’s good for you! (Insert mom voice lol). You could also use the water in soups, sauces, or gravies. Hope you all are having a fantastic day!
