Strawberry Beet Vegan Cheesecake Bars

I’ve been craving sweets like mad lately, so I decided to make these super awesome strawberry beet vegan cheesecake bars! I got the recipe from @dani_nemeh and have made them over and over. These bars are gluten, dairy, and refined sugar free…but most importantly they are so fricken yummy!

For the Crust:

1 bag @onedegreeorganics #sprouted Vanilla Chia Granola (any granola would work)

¼ cup @nutiva coconut oil, melted 

Blend the granola using your @vitamixca (or high speed blender). Combine with the melted coconut oil and press into a 8×8 parchment lined baking dish

For the Filling:

2 @lovebeets beets

8-10 fresh strawberries

1.5 cups raw cashews, soaked for a minimum of 2 hours

1/3 cup coconut oil

1/3 cup honey

1 tsp vanilla extract

Juice of one lemon

Blend all filling ingredients in your @vitamixca or high speed blender until smooth.  Pour over crust and freeze for at least 3-4 hours (overnight is best)
