Flourless Chocolate Chip Blondies (Gluten, Grain, and Dairy Free, Vegan)

This recipe is legit the only blondie recipe you will ever make…EVER. It is so easy and so tasty….and it has a secret ingredient…. C H I C K P E A S

Eating whole chickpeas is a no-go for me … they are hard on my tummy so I don’t eat them unless they are blended into a hummus or this recipe ..hehe

I love that using chickpeas makes this dessert so nutrient dense. They are high in protein and rich in vitamins, minerals, and fibre. The best part? You won’t even know there are chickpeas in this recipe. These blondies taste like straight up peanut butter and chocolate….so so good!

The texture is fudgy, chewy, and decadent. The ingredient list is short and for my IBD warriors, this recipe is gluten, grain, and dairy free. You can also omit the egg and use maple syrup instead honey to make it vegan

Here is the recipe…

  • 1 15oz can chickpeas, rinsed and drained
  • ½ cup peanut butter (can sub any nut butter)
  • 1/3 cup honey (sub maple syrup if vegan)
  • 1 egg (omit if vegan)
  • 2 tsp vanilla
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ cup chocolate chips (I used Enjoy Life)
  • Coarse or flake salt for topping (I used Redmond)

Directions:

  1. Preheat oven to 350 and line an 8×8 baking dish with parchment paper
  2. Using a high speed blender or Vitamix, add all ingredients to the blender except the chocolate chips
  3. Transfer the mixture to a bowl, and fold in the chocolate chips so they are evenly distributed in the batter
  4. Pour the batter into your baking dish and smooth the top with a spatula. I like to sprinkle few more chocolate chips on top for good luck lol
  5. Bake for 20-25 minutes until light golden brown. Test with a toothpick and be sure it comes out clean (don’t over bake)
  6. Let cool, sprinkle with salt, and cut into squares
