Cookie Brownie Bars (Gluten and Dairy Free)

So …the best dessert/snack ever….. a combo of brownies and cookies in one bite! These two are a match made in heaven and make for the perfect bar that satisfies every sweet craving.

The brownie layer is rich and decadent and the chocolate chip layer is the perfect cookie topping.

These decadent bars are gluten and dairy free. You can also make this recipe vegan by subbing flax eggs for the eggs.

Ingredients:

Brownie Layer

  • ¾ cup chocolate chips (I used Enjoy Life Foods)
  • 1/3 cup coconut oil
  • 2 eggs
  • ½ cup applesauce (unsweetened)
  • ¾ cup almond flour (I used Bob’s Red Mill)
  • ½ cup cacao powder
  • 2 tsp vanilla extract
  • 1 tsp baking powder

Cookie Layer

  • ¼ cup coconut oil (melted and cooled)
  • 1 egg
  • ¼ cup maple syrup
  • 1 1/2 cup almond flour
  • 2 tbsp coconut flour (I used Bob’s Red Mill)
  • 2 tsp vanilla
  • 1 tsp baking powder
  • ½ cup chocolate chips (I used Enjoy Life Foods)

Directions

  1. Preheat your oven to 350 and grease an 8×8 baking pan
  2. Let’s start with the brownie layer. Melt the chocolate chips and coconut oil over a double boiler until it is smooth (you can also microwave in 30 second increments). The mixture will be oily.
  3. In a large mixing bowl, add eggs, applesauce, and vanilla and mix
  4. Add your melted chocolate/coconut oil mixture. Add it slowly to be sure the eggs don’t curdle
  5. Add the almond flour, cacao powder, and baking powder. Mix until combined.
  6. Pour the brownie batter into the greased baking dish
  7. Now for the cookie layer. In a large mixing bowl, add your eggs, coconut oil, maple syrup, and vanilla and mix.
  8. Add the almond flour, coconut flour, and baking powder and mix.
  9. Fold in the chocolate chips
  10. Pour the cookie layer over the brownie layer and spread as evenly as possible. Sometimes the brownie part takes over, but that’s ok !
  11. Bake for 20 minutes or until the cookie layer starts to get golden brown.
  12. Cover with foil and cook for an additional 10 minutes or until a knife comes out clean
