Good morning Insta Fam!⁣ ⁣ Here’s my super Good morning Insta Fam!⁣

Here’s my super simple oats recipe⁣
 ⁣
½ GF oats⁣
1 cup nut milk⁣
Cinnamon to taste⁣
 ⁣
**Cook until milk evaporates and desired texture is reached**⁣
 ⁣
While the oats are cooking,⁣
 ⁣
Mash half a banana⁣
Add a squirt of honey (or sweetener of choice)⁣
1-2 tbsp of peanut butter⁣
 ⁣
Once the oats are cooked, pour them over the banana mixture, stir to combine and enjoy!⁣
 ⁣
I added some yogurt, more peanut butter and banana, as well as some  hemp hearts as toppings !⁣
 ⁣

On this day, July 14, 1998 I was diagnosed with IBD, specifically Ulcerative Colitis (UC). I was 9 days away from my 16th birthday..a milestone, one I had been looking forward to celebrating even though I was super sick. To say that day (July 14) was a whirlwind of emotions is an understatement: fear, uncertainty, sadness, pain, anxiety, embarrassment, confusion, and relief. Relief for finally being able to put a name to all of the symptoms that had taken over in the last few months. ⁣
⁣
Now in 2022 as I approach another milestone birthday, I think about how my IBD journey began. Due to the nature of the symptoms, no one knew about my disease, I was too embarrassed to share. I found it hard to navigate and cope with my emotions and my symptoms. ⁣
⁣
I’ve had IBD for most of my life and because of that, I feel like it has always been my identity. But as much as IBD is a very important part of my life, I don’t feel like it’s everything anymore. ⁣
⁣
Over the last little while I have been reflecting on who I thought I was, who I actually am, and who I want to be, be it personally, professionally, spiritually, and as a part of the IBD community. I feel things deeply, and I care deeply….and both are what drive me. I used to fear being vulnerable because I thought it made me weak, but I’ve learned the power of vulnerability and how it makes meaningful connections with others…and now I embrace it.⁣
⁣
I do not know what the future holds for me and IBD, but I thank you for being here and being part of my journey. I am beyond grateful. ⁣
⁣

Lunch time!⁣ ⁣ Super simple gluten, grain, an Lunch time!⁣
 ⁣
Super simple gluten, grain, and dairy free stir-fry for lunch that took me about 10 minutes to make. I bought a bag of frozen mixed stir fry veggies at Costco which is a life saver when you don’t have veggies on hand or you’re in a bind for time…or both! Kept this recipe gluten and grain free by using Nupasta noodles, and this dish is simply seasoned with salt, garlic, coconut aminos and sesame oil. Can’t wait to dig in!⁣
 ⁣
Check out the recipe below:⁣
 ⁣
1-2 cups frozen mixed veggies⁣
1 package Nupasta noodles⁣
1 egg, beaten⁣
2 tsp sesame oil⁣
1 clove garlic, minced⁣
¼ cup Bragg coconut aminos⁣
 ⁣
In a sauté pan, add the sesame oil and garlic. Cook the garlic until it becomes fragrant then add your frozen veggies. Once your veggies are cooked to your desired tenderness, add the egg,  Nupasta noodles and coconut aminos. Stir until the noodles and veggies are coated and you’re done!⁣

I was diagnosed with Ulcerative Colitis when I was 15 years old. I started @gutsygirldiaries in March 2018  in hopes of raising awareness about digestive diseases, emphasizing the importance of  gut health, and providing a place for my fellow IBD warriors to find comfort and support as we live with this disease.⁣
⁣⁣⁣⁣
By sharing my IBD story, I have truly understood the meaning of resilience. It has uncovered a reservoir of strength within me that has helped me to believe that I can do anything despite having a chronic illness. ⁣

⁣i cannot express how grateful I am for all of my followers, my supporters, and for the community of warriors who, despite their suffering, still have the will to fight and share their story with the world as a means of raising awareness about digestive diseases. It sucked having Covid but thankfully it’s over and we got to sneak  in so much family time! ⁣

Perks about working from home? Being able to get m Perks about working from home? Being able to get my workout in on my lunch hour…which means lunch has to be super quick to make and super satisfying too.⁣

I’m using a bag of cauliflower rice (I get mine at Costco) with some shrimp I had meal prepped. I topped it with some flax oil for healthy fat and some parmiggiano Reggiano for flavour, which kind of gives it risotto vibes lol ⁣

Breaking my fast this morning with an omelette (1 egg, ½ cup egg whites, and goat cheese) along with some veggies (zucchini and potatoes)…not featured… COFFEE ☕️⁣

This is one of my go-to breakfasts lately because it keeps me full as it has a balance of protein, carbs, and fats. The zucchini are also one of my favourite veggies to have because it has a good amount of fibre and is easy for me to digest. For my coffee, I always add collagen for some added protein and gut-health support.⁣
