Shortbread cookies are so seasonal and festive. Th Shortbread cookies are so seasonal and festive. They are my favourite cookies to have at Christmas time, and because this recipe is so easy…it might be a recipe that will be on repeat all year round! ⁣⁣
⁣⁣
These cookies are sweet, soft and are without any gluten, grains or dairy. ⁣⁣
⁣⁣
Check out the recipe below: ⁣⁣
⁣⁣
Ingredients ⁣⁣
•2 ½ cups almond flour ⁣⁣
•6 tbsp dairy free butter (I use @earthbalance 
•1/3 cup coconut sugar (can sub a keto-friendly sweetener) ⁣⁣
•1 tsp vanilla ⁣⁣
⁣⁣
Chocolate Dip ⁣⁣
•½ cup chocolate chips (I use @enjoylifefoods ) ⁣⁣
•2 tsp coconut oil ⁣⁣
•2 tbsp pecans, chopped ⁣⁣
⁣⁣
Preheat your oven to 350 and line a baking sheet with parchment. Add the dairy free butter and coconut sugar (or keto sweetener) to a stand mixer and beat until light and fluffy. Once the mixture is light and fluffy, add your vanilla extract and mix. Add the almond flour (1/2 cup at a time) and mix in between each addition. Place your dough in the fridge for about 15 minutes. After chilling the dough, use a tablespoon for measure and roll the dough into little balls and place on your parchment-lined baking sheet. Taking another sheet of parchment and place it over the balls of dough. Press gently on each ball to flatten them slightly. ⁣⁣
⁣⁣
Bake in the oven for 12-14 minutes (check them at the 10 minute mark). While the cookies are baking, melt the chocolate and coconut oil in a double boiler. Once the cookies are cooled, take each cookie and dip half of the cookie in the chocolate mixture then in the pecans and place them on a parchment lined baking sheet. ⁣Chill for about 30 minutes and enjoy! ⁣⁣

Good morning! Let’s talk IBD and working out 💪🏻⁣

For me, physical activity has always helped my symptoms. I always say that during my work out, my UC is totally under control. I don’t have any cramping or discomfort. I mentioned this to my doctor who told me that exercise helps to stimulate the production of seratonin  which is an important chemical and neurotransmitter in the human body. It is believed to help regulate appetite and digestion. Serotonin is produced in the brain and the gut and there are studies which have shown that serotonin plays a major role in regulating gastrointestinal health.  Soooo that’s why I feel so good when I workout!⁣
⁣
So in light of  #crohnsandcolitisawarenessweek , I wanted to share my experience with exercise and IBD. I have noticed that my digestive health has truly benefitted from moving my body every day. ⁣

A HUGE thank you everyone who continuously supports me in my fitness journey. I have learned so much from working out with different trainers and doing different programs like bootcamp, circuit/interval training, yoga, etc. There is something really special about having a community like this, and I am truly grateful ⁣

This chili recipe has the deep, warm flavours of a traditional chili, sans tomato or chili pepper.  It’s the perfect comfort food recipe you can make any day of the week in the #instantpot ⁣⁣

I love using my Instant Pot as it allows me to make and create hearty, comforting recipes in a fraction of the time which makes this recipe great for busy weeknights or even meal prep! ⁣⁣

This chili is great for anyone with autoimmune disease because it is nightshade free, loaded with vegetables, anti-inflammatory herbs and spices, and of course, Broya gut healing bone broth. ⁣⁣

As a colitis warrior, I always do my best to raise awareness about this “invisible disease”. Even though this disease can take a toll on me physically and emotionally, I am a true warrior who will not surrender to the constant fight against IBD. ⁣⁣⁣

My hope is that by sharing my story via my blog and IG account @gutsygirldiaries, I will help raise awareness about digestive diseases, emphasize the importance of  gut health, and provide a place for my fellow warriors to find comfort and support as we live fearlessly with IBD. ⁣⁣⁣
