Gut Healthy Spinach and Banana Pancakes (Gluten and Dairy Free)

So my son is on this spinach kick..he’s been putting spinach on everything! (I’m not complaining because he’s totally not a veggie lover)

I was a little hesitant with this recipe, because I wasn’t sure if the kids would like it, but they loved it! It was super simple to make and because it contains whole, nutritious ingredients, they were satisfied all morning.

I added Vital Proteins collagen peptides because #guthealth . The collagen peptides are super versatile and have no colour or flavour, so it’s a no brainer to add them. #momwin

Check out the recipe below, you and your kids will love them!

Ingredients:

  • 1 ¼ cups Bob’s Red Mill Gluten Free Oats
  • 1 cup milk (I used almond)
  • 2 tbsp maple syrup
  • 1 tbsp ground flax
  • 1 scoop Vital Proteins collagen peptides
  • 1 cup raw spinach
  • 1 banana
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Butter or coconut oil for greasing

Directions:

  1. Add the oats to your high speed blender, or Vitamix and blend until it becomes a flour consistency
  2. Add all remaining ingredients and blend on high until smooth
  3. Heat a skillet or griddle and grease with butter
  4. Place ¼ cup portions of pancake batter in to your pan and flip once each pancake gets bubbly on top
  5. Serve with your favourite toppings
